This small property of 10 acres is located on the due-south facing slopes of the famous hillsides of Canon-Fronsac. Here, the clay-silt soils are ploughed as in the old days, which allows the aeration of the soils and the avoids the need for herbicides. The vines are planted at a close density of 6000 vines per hectare. To increase finesse and concentration, a green harvest is carried out during the late summer.
The Pavillon wines are rich and harmonious and age beautifully. The southern exposure yields wines with soft tannins and a roundness on the palate. |

Since 1989, the wine is 100% Merlot. After hand-harvesting and a careful selection, the grapes are allowed to macerate under temperature control between 14 and 26 days, according to the vintage.
